How do you win in a match of any japanese martial art?

To use the phrase "Japanese martial art" is like to use the phrase "ball game"; it's still really diverse (tennis vs rugby for example).

In Judo, there are 4 ways to win:

1) Scoring an "ippon". If you throw your opponent straight onto their back, you score an "ippon" which means you win.

2) Having the most points when time runs out: if you throw you opponent onto their side, that's a "wazawi" which is worth 7. If you throw your opponent onto their bottom and them land on top of them, that is a "Yuko" worth 5. If you throw your opponent onto their bottom, that is a "Coca" worth 3. If you have the most points when time runs out, you win.

3) Submission; if you strangle your opponent or put them in some kind of lock and they "tap out" (meaning they forfeit the match) then you win.

4) Holds: if you pin your opponent to the floor any they don't get out within 25 seconds, you win. Also, if you hold them down for 20 seconds, you get 7 points.

In Karate, you win by scoring the most points. It varies how the points are scored, but in the version I do, it's 3 points for a head-kick, 2 for a body-kick and 1 for a hand attack to anywhere on the body. Some versions of Karate also declare a victor if that person's opponent is knocked-out.

In Sumo, you win by throwing your opponent out of the ring or pinning him to the floor for long enough.

Jiu-jitsu is pretty much the same as Judo but with different techniques.

You have asked two questions. second question is easy, to win a match you simply score more points than your opponent.

The first question, what is the aim of Japanese martial arts. Originally they were all designed to kill, maim or disable the enemy. Nowadays they are used for many other things, fitness, fun, competition, self defence. Some people even uses them as a psuedo-religion to develop their spiritual side.
