Every Wednesday at 7 UFC tonight comes on and they give the goods about what's coming up and they break down the fights and fighters. The UFC have a lot of fight cards at least one every month like from Aug. to Sept. there's 3 title fights. The best fighters right now are Jon Jones Light heavyweight champ only lost is by DQ Chris Weidman undefeated Middleweight Champion and Rhonda Rousey undefeated Female Bantamweight Champion and there's plenty of more also you can get on Bleacher Report they got a lot of info about what's really going on in the UFC
I think you should watch some of first couple UFC events to see how far it comes. There's some pretty brutal moments in some of the early fights since some people claimed they were ninjas and things and were fighting someone who knew what they were doing.
To catch up on modern MMA, you should watch some Frank Shamrock fights. In my mind, he was one of the earliest fighters to effectively combine everything. Watching the transition of the WW division from Matt Hughes to George St. Pierre was pretty interesting too--you really see the evolution of a complete martial artist. Chuck Liddell knocking everyone out, even guys who had never been knocked out. Some of Wanderlei Silva's Pride fights are worth viewing too so you get a picture of what that guy use to be like. Finally, just take in some of Anderson Silva's striking ability during his run at the top. Even when he comes back, people will not want to fight him.
To learn some grappling, watch Sakuraba (learn about him too) v. Carlos Newton (UFC champ before Matt Hughes) http://www.dailymotion.com/video/xzpwjt_... No real strikes in this fight (by agreement) and has some beautiful grappling.
One of the best fights ever: Shogun v. Lil Nog http://vimeo.com/23740505

That should give you access to the UFC's schedule.
Incidentally, the sport is known as Mixed Martial Arts (MMA). While the UFC is the largest MMA organization in the world, it's not the only one, or even the oldest. Shooto and Pancrase, two organizations based out of Japan, pre-date it.
There are a few other major organizations; Bellator and World Series of Fighting (WSOF) are broadcast in the US. One FC, out of Asia, and Jungle Fight, out of Brazil, are also pretty good. Other organizations include M-1, XFC, Tachi Palace Fights, BAMMA (British Association of MMA), Invicta (women's fights), and DEEP.
