No. If I were in that situation, I'd give the guy whatever he wanted and hope that he didn't kill me.
You are not understanding it. You don't disarm anyone when the knife or gun is already at your head or throat. You disarm the attack BEFORE it reaches that point.
Your question is like asking what do you do if you are cornered in a deadend surrounded by 10 homicidal maniacs armed with machineguns. At that point, it is too late to do anything.
Only if you're confident and are well-practised (years' experience) in disarming from any position. Otherwise, I'd just give them what they want, best to avoid conflict where possible.
