If a fighter was beat down for a championship match and was angry about it, could he just sue the UFC or does he have to abide to a contract?

What could he sue them for? Him being a worse fighter than the other guy? "Angry" isn't grounds for a lawsuit.

Any contracts that I have ever seen or signed usually have a release clause in them that among other things keeps you from holding the promoter and his company responsible for things other than negligence. What that basically means is that you can't sue them without proving they they were negligent in some way and I have seen a situation where that was proven and a promoter successfully sued but that was a very small company.

The UFC has a full time staff of lawyers for working all sorts of problems and issues and keeping them out of legal trouble. They also advise and make recommendations to keep something like what you are asking from happening so its highly unlikely that a fighter could sue based solely on him losing and taking some punishment in the process. There is of course a chance that the referee could be sued though but they are not an employee of the company but instead only an agent or private contractor to the company and there is a difference there in legal terms and who is ultimately responsible.

Sue them for what? The UFC gave him a chance. They are not responsible for what happens before or after the fight.
