As noted, everyone who fights in the UFC is a professional fighter, and in order to fight one (even if it's not in an official UFC fight), you have to give them a reason to want to do so. About the only thing that will make one of them want to fight you (or anybody else) is if there's a *really* big paycheck waiting for the winner at the end - otherwise, in all likelihood they won't give you the time of day.
They are all professional fighters. In order to be signed by the UFC, you need to have competed in other, smaller MMA organizations and built up a winning record. And you'd never get anywhere near the champs if you're not a winning fighter.
You can compete at the lower levels. Find a gym. Find a promoter. Get signed.
Fighting a champion has to be earned.
