Depends what you're after in a good fight. Rich Franklin v. Evan Tanner was a solid one-sided beating that had some good back and forth. Scott Smith v. Pete Sell was an awesome one if you want fight-ending drama. If you just want some straight up quality fighting, Little Nog v. Shogun is one of the best (I'll try to link to it, but it may get removed) http://vimeo.com/23740505 If you want to see some top shelf grappling (for the time), the Sakuraba v. Carlos Newton fight was pretty awesome--they agreed not to strike beforehand I believe.
I'd give Karo Parysian v. Matt Serra an honorable mention here too. Some awesome moments in that fight.
