Just look at the lighter weight classes. The Shooto organization is known for their smaller fighters, and the UFC has introduced a 125lbs division.
I'm sure there are several, but I'd be guessing because I don't follow "the tale of the tape" beyond right before a fight. But I know my Dad was 5'4" and 135lbs, and he was a devastating fighter in his day. I know that wasn't the answer you were looking for but I wanted to reinforce the idea that it's not about size but about ability. In the MMA they control the competition by weight classes so you might get some opponents that are "taller" in perspective, but the lighter weight classes are generally shorter.
A lot of the fighters in the low weight classes
At sometimes its quite helpful to be a shorter fighter because you can have more musle than a taller opponent
